Some days I don't feel like eating a super heavy lunch or dinner. Sometimes it's because I'm not feeling well and other times it's because I don't want to go through all of the cooking efforts. I try to cut things out where I can by using canned or frozen veggies and ingredients, and buying jarred herbs and spices rather than trying to grow my own.
If you are a lover of all things chicken, especially chicken salad, then this recipe is a MUST HAVE! It's super easy, not very messy (really you use 1 bowl and 1 cutting board), and delicious for dinner OR lunch.

Alright guess what folks!? Today is Grilled Cheese Day! Yes, April 12th has been dubbed the official day of consuming grilled cheese so today's post is of course a fun and unique (but still easy) recipe for my favorite kind of grilled cheese!
All you need is bread, brie cheese, and your favorite flavor of jelly. There's something about the jelly that gives this type of grilled cheese a unique taste and flavor. It goes so well with a bowl of steamy tomato soup!

I am a sucker for brownies. Baking has always been fun for me and the best part is the end product, of course. Today, I have a super fun recipe for you. It's fun because it's SO simple!!!

I am a sucker for brownies. Baking has always been fun for me and the best part is the end product, of course. Today, I have a super fun recipe for you. It's fun because it's SO simple!!!
One of the three ingredients is Rigoni di Asiago's Nocciolata Dairy Free Organic Hazelnut and Cocoa Spread. It's made with organic ingredients and contains absolutely no GMO's, preservatives, or added colors or artificial sweeteners. This stuff is so yummy! it combines hazelnuts, fair trade cocoa and cocoa butter, natural vanilla extract, and raw cane sugar. The flavor is amazing and it's nice to know it is made with environmentally-responsible cold-pressed sunflower oil. And surprisingly it contains much less sugar than other brands.
Ingredients:
3 Large Eggs
1 Heaping Cup All-Purpose Flour
2 1/2 Cups of Nocciolata
Step 1: Preheat the oven to 350 degrees and spray a 9x13 pan with nonstick cooking spray. Combine the flour, Nocciolata, and eggs in a bowl.
Step 2: When the mixture is combined, pour into the pan.
Step 3: Bake for about 25 minutes, until the surface looks set and slightly crispy.
YUM!!!! It was so good, much better than any brownie I've ever made before.

I love taco nights but the one thing that puts a tamper on them is the amount of salt that comes in a packet of taco seasoning. So I decided to make my own.
Here's how to make it.
1/4 Cup plus 1 Tbsp Chili Powder
1 1/4 tsp Garlic Power
1 1/4 tsp Onion Powder
1 1/4 tsp Crushed Red Pepper Flakes
1 1/4 tsp Dried Oregano
2 1/2 tsp Paprika
2 Tbsp plus 1 1/2 tsp Ground Cumin
1 Tbsp plus 2 tsp Black Pepper
Combine all ingredients in mason jar, seal and shake. Use 2 Tbsp per pound of meat.
You'll notice you don't feel so guilty and bloated afterwards because there's NO SALT!

I don't know where you live but in Pennsylvania the summer weather is sticky, hot, and humid. I basically stay confined to my screened in porch because there's shade and I will do whatever I can to stay cool when I'm outdoors. A great way to cool down is to have a frozen treat, so today I am sharing with you a super easy (I mean SUPER EASY) tutorial for making your own popsicles at home!
Step 1 | Get a Popsicle Mold
This really is necessary otherwise how can you form a popsicle? So this is the Classic Pop Mold from Zoku. Zoku has an awesome selection of pop makers and accessories for slushy and frozen drinks and treats.
These are really cool because the stick and the little holder just snap together! It's super easy! Plus I love the fun green color.
Step 2 | Place Cups in Mold
Place the cups in each slot of the mold.
Step 3 | Fill with Liquid of Choice
You can use juice, soda, or even make an adult beverage pop. Get creative!
Fill to the line that says "fill line" and make sure you don't go over it.
Step 4 | Insert and Snap Sticks
Now you take the sticks you snapped together when you first get your Pop Mold and you press them into the mold cups until you hear a snap and know it's connected.
Step 5 | Freeze for 24 Hours
So simple - just place in the freezer and take out after 24 hours.
See how I filled one up to high and it's oozing out? So that's why you don't do that, lol!
Step 6 | Rinse Under Warm Water
In order to slide the pop out of the cup, you need to hold it under warm water for maybe 10-20 seconds until you can pull the cup off easily.
Step 7 | ENJOY!
See I told you it was super easy!

Today I have a super easy recipe for you guys and it's perfect for this time of year when you want something warm and cheesy. It's a Chicken Quesadilla recipe and once again I'm using Keystone Meats Canned Chicken. I love this stuff! It's so easy because it's already shredded and cooked and all I have to do is reheat it!
Ingredients:
- 1 bag of Cheddar Jack Shredded Cheese
- 1 Can of Keystone Meats Chicken
- Sour Cream
- Tortillas
1. Place cheese on one tortilla and then layer with some chicken and then cheese again. Place into non-stick pan over medium heat.
2. Place another tortilla over top. Wait till bottom gets browned then flip and heat until that side gets browned and cheese is melted throughout.
3. Use a pizza cutter to cut into triangles. Serve with sour cream on the side.
See? I told you it was easy. Seriously I love canned meat from Keystone Meats and it's only got 100 mg of sodium in it!

I am all about delicious foods and easy recipes so today I wanted to combine the two and bring you a recipe for my favorite slow cooker Buffalo Chicken Dip that's super easy to make and oh so delicious to eat!

I am all about delicious foods and easy recipes so today I wanted to combine the two and bring you a recipe for my favorite slow cooker Buffalo Chicken Dip that's super easy to make and oh so delicious to eat!
Ingredients:
1 28 oz. can Keystone Meats Chicken
2 8 oz. packages of cream cheese (softened)
1 Cup Ranch Dressing
3/4 Cup Frank's Red Hot Buffalo Wing Sauce
1 1/2 Cups Shredded Cheddar Cheese
Directions:
1. Drain the chicken while in the can.
2. In a saucepan over medium heat heat chicken and wing sauce until warm.
3. Stir in cream cheese and ranch dressing and stir well until blended and warm.
4. Mix in half the shredded cheese then ransfer to slow cooker.
5. Sprinkle remaining shredded cheese over the top.
6. Cover and cook on low setting for about 40 minutes or until hot and bubbly.
Serve with crackers or celery.
Now when I say easy I don't just mean that it's because you can make it in the crockpot. No, I'm talking about also having the chicken canned and ready to go so you don't have to prepare it yourself. That's why I used a can of chicken from Keystone Meats.
