My Favorite Veggies to Grow

Monday, May 4, 2026

I've been gardening for a decade now and I've had enough trial and error to determine what I enjoy growing and what just doesn't work for me.  Sometimes your yard, soil, lighting, etc. isn't right for what you grow. Sometimes the weather during any given year can make it difficult to get a healthy harvest of something so you try again next year.  And sometimes you just really don't enjoy something enough to do it again. So here are my favorite veggies to grow after years of trial and error. Peppers
Peppers for me are practical because I use them in a lot of dinners and you can chop/slice them and freeze them for later use.  I usually just buy a few baby pepper plants at the beginning of the season, plant and stake them, and let them do their thing. There are some easy pruning chores that I don't mind and it's easy to know when to harvest them so peppers will always be something I grow in my garden.

Tomatoes
Tomatoes are another pretty easy vegetable for me to grow.  Sometimes the plant gets out of hand but with pruning during the season it's easy to manage and honestly I love adding fresh tomato to something we are having for dinner.  I buy a baby plant in Spring and let it do it's thing.

Lettuce
Lettuce is super easy and can be started early in the season which is nice because by March I am itching to go play in the dirt.  I love lettuce because it's easy to care for - just water it! And it makes great fresh salads for lunch. I can just go out and pick fresh lettuce each day as I need it.  I start my lettuce from seeds outdoors because they are so easy.

Carrots
Carrots are super fun because you can see when they're ready to be harvested as the tops begin to poke out of the dirt.  They are low maintenance for me and taste delicious fresh so I love going out and picking one or two at a time.  They don't take up much space since they are a root vegetable. I plant my carrots from seeds.

Potatoes
By far my favorite thing to grow are potatoes. They are so easy! They take up no space in my actual beds because I just use grow bags.  I buy seed potatoes in late winter and then plant them in very early spring. All I do is water them and watch their foliage because when it dies back I know it's time to harvest. They are also the most fun to harvest because it's like digging for treasure. They also are easy to wash and store and last me a couple months.
